Panos flew in a friend from Greece, Andreas,
head chef at a five-star resort in Crete, who
agreed to assist in assembling the menu and
finalizing the kitchen set-up. Between Toula,
who is known for her splendid Greek dishes,
and Andreas, the Greek Isles' menu and the Photopoulos'
dream came into fruition.
The menu consists of traditional Greek recipes
that have been passed down from generation to
generation. Virtually everything on the menu
is prepared in-house; from the bread to the
